Breakfast variations and maybe a dessert
Today it is 15 months since I started my weight journey. It is 15 months since I took my first plate of oatmeal.
15 months of oatmeal
for breakfast almost every day! Sometimes I get tired of it and on a weekend if
I have more time in the morning I will try to make something different just for
a small treat now and then.
Sometimes I make bacon
and scrambled eggs. It has been a good change and feels a bit luxurious. Some
might argue that eggs and bacon are not so healthy. I would say it depends on
the amounts you eat and we need proteins which you get from eggs. Eggs also
have many vitamins. For people watching their cholesterol you might keep the
amount of eggs you eat down. But for me that is not an issue, so I happily eat
eggs with salad and even for a breakfast now and then.
Bacon can be discussed
and the health effects of eating it. I will not get into that discussion, since
there are so many studies and thoughts of the benefits or the dangers of the
fats in for instance bacon. Personally I have not avoided the natural fats in
food over these months, whether it is meat or fish, only the fats that are "man made". I did start my diet change to lose weight and not because I have any
illness or because of high levels of cholesterol or anything like this. So once
in a while I eat bacon.
Sometimes I also make
a smoothie for breakfast with nonfat, natural Yoghurt, fruits and a little
banana. I just mix it in the mixer and drink it. I never add sugar or sweets,
just fresh fruits. It is also a very healthy start on the day.
Last night I wanted to
have some small snack as it was Friday night. I didn´t have fresh fruit at home
but I found I had some frozen Rhubarb in the freezer. Before I would use them
to make a Rhubarb pie but now I cannot do that since it would mean a pie crust
made with a lot of butter for instance. So I tried to think of some other way
to use the Rhubarb. Still I was thinking it is a bit sour and I cannot make
anything where I add sugar to sweeten it, so I was wrecking my brain really. I
even found I had some dried prunes in the kitchen cabinet.
The day before I had
watched a program with Gordon Ramsey and he made a dessert from Yoghurt and
fresh fruits. So I decided to take the idea and try to make my own variation
with the ingredients I had. I even had some oatmeal, coconut flakes, sesame seeds, some
dark chocolate and some bananas.
So last night I made a
dessert for the first time in 15 months, which even I ate and not just treated
others. And this morning I made it even for breakfast, like a variation of a smoothie.
So this "breakfast
smoothie" consisted of layers of natural, nonfat Yoghurt, a layer of Prunes
compote, a layer of Rhubarb compote, banana slices, roasted Oatmeal, coconut flakes and sesame
seeds.
It turned out as a
great dish for both a dessert and for breakfast. For the dessert I topped it
with little flakes of dark chocolate to make it look festive. However that can
totally be skipped as well.
The fruit layers could have been made with any fruits really, but I used what I had. I made a compote of the Rhubarb by boiling it with a little water. And for the Prunes I did the same thing. I boiled them until totally soft and the fruits kind of dissolving into a compote. I than mixed it with a mixer and let it cool off completely. Since the Prunes are a bit sweet I got both the sweet and the sour tastes in the dish. If I had for instance strawberries or some other berries or fresh fruits I would have used that instead of the prunes for instance. Still a little prunes are good for your stomach. The oatmeal, coconut flakes and sesame seeds I roasted in a pan and also cooled off completely.
