The great and exiting challenge I have had over the two last years is to find healthy ingredients for my food that would help me to get all nutrients needed at the same time I reduced in weight
Breakfast is the most important meal to get a good start and energy for the day. And energy that will last and not make me feel tempted to get a quick boost by some sugarkick or something like that. During the two last years I have eaten oatmeal for breakfast almost every morning for breakfast. Just some saturday or sunday I did something different.
Today I found another great breakfast alternative that is really healthy and very tasty. It is a Haitian breakfast dish with scrambled eggs and plaintains.
It is a great variation to my diet and a very tasty. I also discoverd a new great ingredient I have not tried at all during these two years, the plaintain! It contains a lot of A and C vitamins, even B-6 vitamins, iron and magnesium.´It has fibers that is really needed. It contains some carbs but much less than oatmeal. So it is a great breakfast alternative.
